250ml honey
Method:
Add the honey to a pan and cook to the 'hard crack' stage (When you drop a bit of this syrup into cold water, it will solidify into threads that, when removed from the water, are flexible, not brittle. They will bend slightly before breaking). Pour the reduced honey onto a buttered marble slab. As soon as outside edges are cool enough to touch, fold to the centre and shape into a long roll. Start pulling and stretching the toffee whilst still hot. Keep pulling until the honey becomes light and porous and small strings develop.
Cut into short pieces then place in paper-lined metal containers and store for 2 days (so the toffee softens) before eating.
