Barbecued Salmon with Mango Salsa: Classic Fusion recipe for a barbecue dish of salmon steaks in a lime dressing served with a mango, red onion and passion fruit salsa.
Ingredients:
For the Fish:
4 salmon steaks
finely-grated zest of 1 lime
juice of 1 lime
salt and freshly-ground black pepper, to taste
For the Salsa:
1 large mango, peeled, flesh sliced from the stone and diced
1 red onion, finely chopped
2 passion fruit
2 fresh basil sprigs
2 tbsp lime juice
salt, to taste
Method:
Rinse the salmon under cold, running, water then pat dry with kitchen paper. Arrange the fish in a large, shallow, non-reactive dish. Sprinkle over the lime zest, then pour over the lime juice.
Season to taste with salt and black pepper then cover and set aside in the refrigerator to marinate as you prepare the salsa.
Combine the mango flesh and onion in a bowl. Halve the passion fruit and scoop out the seeds and pulp with a teaspoon. Add these to the bowl with the mango pulp. Tear the basil leaves and add to the bowl with the lime juice. Stir well to combine and season to taste with salt. Cover with clingfilm and set aside for the flavours to meld as you cook the fish.
Place the marinated salmon steaks on the oiled grill of a barbecue over medium-hot coals. Cook for between 3 and 4 minutes per side. Serve hot, accompanied by the salsa.
