Ingredients:
500g fish fillets
1/4 tsp salt
1/4 tsp freshly-ground black pepper
100g bell peppers, chopped
2 tbsp garlic, finely chopped
80g plum tomatoes, chopped
2 tbsp onions, minced
250ml Jerk barbecue sauce
Method:
Season the fish fillets with salt and black pepper then roll tightly and arrange in a baking dish. Combine the bell peppers, garlic, plum tomatoes and onions in a bowl. Pour over the Jerk barbecue sauce and stir to combine. Pour the mixture over the fish then transfer to an oven pre-heated to 180°C.
Bake for about 20 minutes, or until the fish is cooked through and beginning to flake. Serve hot with rice.
