This is my attempt at reproducing a barbecue spice rub (locally called 'barbecue spice') that is used commonly in Botswanan cookery.

Ingredients:

4 tbsp sea salt
1 tbsp freshly-ground black pepper
1 tbsp paprika
2 tsp cayenne pepper
2 tsp dried oregano, crumbled
2 tsp granulated garlic
1 tsp ground cumin
1 tsp ground alligator pepper

Method:

Mix all the ingredients together in a bowl, spoon into a jar, seal and store in a cool, dark, cupboard until needed.
