Bang bang chicken (Chinese: 棒棒雞), also known by variant names such as bam bam chicken or bon bon chicken, is a popular chicken dish in Chinese, specifically Sichuan cuisine. The name bang bang chicken is derived from the manner in which the meat is tenderized using a stick or hammer.

Ingredients:

350g (12 oz) boneless, skinless, chicken meat
A few drops of toasted sesame oil
2 tbsp sesame seed paste
1 tbsp light soy sauce
1 tbsp chicken stock
½ tsp sea salt
Pinch of sugar
8 tbsp shredded lettuce leaves
1 tbsp toasted sesame seeds

Method:

Place the chicken in a saucepan of cold water, bring to a boil, reduce to a simmer and cook for 8-10 minutes. Drain the meat, set aside to cool until it can be handled then cut or tear into bite-sized pieces.

Mix together the sesame oil, sesame paste, light soy sauce, chicken stock, salt and sugar then whisk until the sauce is thick and smooth. Add the chicken and toss to coat.

To serve, arrange the shredded lettuce on a large plate and spoon the chicken and the sauce over the top. Sprinkle with the sesame seeds and serve at room temperature.
