Plantains with Gari: Togolese recipe for a snack or starter of plantain slices coated in cassava flour that are deep fried to cook.
Ingredients:
2 plantains, peeled and sliced about 5mm thick
200g gari (cassava flour)
oil for deep frying
salt, to taste
hot chilli powder (optional)
Method:
Heat the oil in a deep fryer to 180°C.
In the meantime, dip the plantain slices in the gari and press the cassava flour into the fruit to coat.
When the oil is hot, drop in the gari-coated plantains a few at a time. Fry until golden brown then remove with a slotted spoon and drain on kitchen paper as you fry the next batch.
Serve warm, liberally sprinkled with coarse salt and hot chilli powder.
