Ingredients:

720ml milk
3 eggs
200g sugar
240ml whipping cream
120g smooth peanut butter
3 ripe bananas
juice of 1 lemon

Method:

Beat the eggs in a bowl then whisk in the sugar until light and creamy. Add the milk to a pan then scald (heat to almost boiling) and immediately add to the egg mix, stirring vigourously to combine then stir-in the cream and set the mixture aside to cool.

When cold take 200ml of the milk mixture and stir into the peanut butter then return to the milk mixture and whisk to combine. Add the milk mixture to your ice cream mixture and begin to churn. Meanwhile, peel the bananas and mash with a fork. Add the lemon juice and mix thoroughly to combine. When the ice cream is almost solid add the bananas and continue churning until frozen.
