This is a classic ice cream influenced by the glaces of South America and uses dulce de leche (caramel toffee) as its base.
Banana and Dulce de Leche Ice Cream: Classic British recipe for an ice cream made from a blend of bananas, water, sugar, lemon juice and coconut cream shown as three scoops in a serving cup.
Ingredients:
4 very ripe bananas
100ml water
100g sugar
3 tbsp fresh lemon juice
250ml Dulce de Leche (caramel toffee)
Method:
Add the sugar and water to a saucepan. Heat gently until the sugar dissolves then bring to a boil and immediately take off the heat then set aside to cool. Once the syrup is cold peel the bananas, chop roughly and add to a food processor along with the lemon juice. Purée until smooth then add the syrup and process. Turn into a bowl and mix in the Dulce de Leche.
Pour the mixture into the bowl of an ice cream machine and churn according to the manufacturer's instructions.
