Baked, Spiced, Red Cabbage

Baked, Spiced, Red Cabbage is a traditional Canadian recipe for a classic accompaniment of red cabbage with onion, apple and spices baked in vinegar and brown sugar and which makes an excellent side dish for Christmas or Thanksgiving dinner. Ingredients:

750g red cabbage, quartered and cored
1 large red onion, chopped
1 cooking apple, cored and chopped
2 garlic cloves, crushed
1/4 tsp ground cloves
1/4 tsp freshly-grated nutmeg
1 1/2 tbsp soft brown sugar
2 tbsp red wine vinegar
20g butter, cubed

Method:

Finely shred the cabbage then mix in a bowl with the onion and apple.

In a small bowl, mix together the vinegar, garlic and spices. Stir to combine then pour this spiced vinegar over the cabbage mixture and toss to combine. Turn into a baking dish and dot the top with the butter.

Cover with a lid or foil then transfer to an oven pre-heated to 150°C and bake for 90 minutes, stirring twice during the cooking process.

Once cooked, season to taste with salt and black pepper, turn into a warmed dish and serve immediately.
