This is a very traditional method of cooking scallops by baking in the shell with a breadcrumb topping.

Ingredients:

16 scallops, in their shells
2 tbsp lemon juice
12 tbsp golden breadcrumbs
salt and freshly-ground white pepper, to taste

Method:

Shuck the scallops and separate the shells. You will see that one shell is flat whilst the other is deep and dish-like. Discard the flat shell then wash and scrub the remaining shell.

Chop the scallop meats and place in the shells. Drizzle with a little lemon juice, scatter over the breadcrumbs then season to taste with salt and white pepper. Arrange on a baking tray, cover with a sheet of greaseproof (waxed) paper (this will prevent the scallop meats from drying out).

Transfer to an oven pre-heated to 170ºC (340ºF) and bake for about 30 minutes. Serve hot.
