Baked Apples with Prunes, Cinnamon and Ginger

Baked Apples with Prunes, Cinnamon and Ginger is a traditional British recipe for a classic dessert of cooking apples that are cored, stuffed with spiced prunes and baked until tender that makes an excellent snack for Bonfire Night (November 5th). Ingredients:

4 cooking apples, cored
2 pieces of preserved stem ginger, finely chopped
1/2 tsp ground cinnamon
4 prunes, pitted and chopped
50g light muscovado sugar
1 tbsp butter
4 generous scoops of vanilla ice cream, to serve

Method:

Using a sharp knife score a line around the centre of each apple. Place in a baking dish with a little water in the base.

Combine the ginger, cinnamon, prunes and sugar in a bowl. Stuff this mixture into the holes in the apples, ensuring that they are well packed. Top each with a knob of butter then place in an oven pre-heated to 180°C and bake for about 40 minutes, or until the apples are cooked through and soft. (If desired, you can cook the apples up to the day ahead and warm them in the microwave before eating).

Remove from the oven and use a fish slice to carefully transfer the stuffed apples to a serving bowl. Add a scoop of vanilla ice cream and serve.
