Baileys and Chocolate Cheesecake
Baileys and Chocolate Cheesecake is a modern Irish recipe for a classic no-bake cheesecake of a Baileys, icing sugar, cream cheese, chocolate and double cream top that's served on a biscuit (cookie) crumb and butter base that's set in the refrigerator. This is an indulgent cheesecake to celebrate with, be it for a birthday,
Christmas, New Year or St Patrick's day. This is also an easy cheesecake as there is no baking involved.
Ingredients:
100g butter
250g digestive biscuits (or Graham crackers), crushed
600g cream cheese, softened (or you can use my
home-made cream cheese recipe to prepare your own)
25ml Baileys
100ml icing sugar
300ml double cream, whipped
100g dark chocolate, grated
To Garnish:
200ml double cream, whipped
cocoa powder, for dusting
Method:
Melt the butter in a pan then stir in the crushed biscuits. Mix until the biscuit crumbs have absorbed all the butter then take off the heat. Press the crumb mixture into the base of a lined 18cm diameter springform cake tin, ensuring that the mixture is pressed part way up the sides of the tin. Transfer to the refrigerator and allow to chill and set for 60 minutes.
In the meantime, prepare the filling. Lightly whip the cream cheese in a bowl then beat in the Baileys and icing sugar. Fold in the whipped cream and the grated chocolate. Stir until smooth then spread the mixture evenly onto the biscuit base. Transfer to the refrigerator and allow to chill and set for at least 120 minutes.
Once set, remove from the refrigerator and carefully take the cheesecake out of the tin. Decorate the top with the whipped cream then add a dusting of cocoa powder. Slice into wedges and serve.
