Bahamian Cracked Conch

Ingredients:

4 large conchs cleaned
2 limes, juiced
2 eggs
120ml evaporated milk
½ tsp parsley
½ tsp brown sugar
Salt and freshly-ground black pepper to taste
120g flour
Vegetable for frying

Method:

Clean conch meat thoroughly, add meat to a freezer bag, and pound with a meat mallet until thin and tender (don’t skip this step).

Season the conch with lime, salt, pepper, and brown sugar.

Combine the flour and parsley in a bowl and set aside.

Beat the eggs until frothy, then mix together with milk until combined. Dip each conch meat piece into the egg mixture, then roll in flour. Shake of excess flour.

Add oil to a pre-heated frying pan or deep fryer and fry the battered conch until golden brown. Once fried, drain the oil and let cool for 10 minutes.

Serve the cracked conch tartar sauce and lime wedge for taste. Ketchup and hot sauce are also optional condiments!

Often they're served with chips (fries). But if you serve with peas and rice to forms the national dish of the Bahamas.

This dish can also be prepared with prawns (shrimp) or squid can be substituted if conch is unavailable in your area’s market.
