Baguitchi (Hibiscus Leaf and Okra Sauce) is a traditional Guinean (from Guinea-Bissau) recipe for a classic sauce or vegetarian dish of cooked hibiscus leaves and okra pounded in a mortar to a sticky paste. Ingredients


leaves from 2 bunches of hibiscus stems
10 okra, stem ends removed

Method:

Wash the hibiscus leaves well, chop coarsely then place in a pan. Add a little water to just cover then bring to a boil. Add the okra to a steamer and place above the pan.

Cook for about 10 minutes, or until the okra pods and leaves are tender.

Drain the hibiscus leaves, place in a mortar and pound to a paste. Add the okra and pound into the leaves until you have a sticky mass.

Either serve as a vegetarian dish with rice or serve as a sauce or garnish for stews.
