Bacon Turnip Mash

This is a very warming winter side-dish that makes an excellent accompaniment for a Bonfire Night meal.

Ingredients:

1kg turnips, peeled and cubed
2 tbsp butter
salt and freshly-ground black pepper, to taste
1 tbsp garlic, minced
225g bacon, fried and diced
2 tbsp bacon dripping (save the pan juices from cooking the bacon)

Method:

Bring a pan of lightly-salted water to a boil, add the turnips and cook for about 30 minutes, or until tender. Meanwhile, fry the bacon until crisp then remove from the pan and dice (reserve 2 tbsp of the bacon fat).

When the turnips are tender drain into a colander then return to the pan and mash until smooth with the butter, salt, black pepper and garlic. Add 2 tbsp of the bacon drippings and the bacon and stir through to combine. Serve hot.
