The use of bacon in dishes is a notable feature of Irish cookery (both North and South) and this soup is a classic example of Irish fare in that respect.
Ingredients:
225g bacon, diced
2 large potatoes, peeled and cubed
450g diced, tinned, tomatoes (with juice)
240ml chicken stock
140g shredded dark green leaves from a Savoy cabbage
salt and black pepper, to taste
Method:
Add the bacon to a large pan and cook until it renders its fat and begins to brown. Drain any excess fat from the pan then add the potatoes, tomatoes and enough of the chicken stock to just cover.
Season to taste, bring to a boil then reduce to a simmer and cook until the potatoes are tender (about 20 minutes).
Add the cabbage and allow the soup to simmer for about 4 minutes, until the cabbage is tender, then serve.
