Bacalao à la Naranja (Cod with Orange): A Spanish recipe for a dish of cod steaks baked in an orange and mushroom sauce.

Ingredients:

750g fresh cod steaks
finely-grated zest of 1/2 orange
juice of 2 oranges
1 orange, sliced thinly
2 shallots, finely chopped
200g mushrooms
fresh tarragon, minced, to taste
4 tbsp chopped parsley
salt and freshly-ground black pepper, to taste
2 tbsp olive oil

Method:

Wash and dry the fish steaks then set aside.

Wipe the mushrooms clean and cut the stems level with the caps before slicing thinly.

Heat the oil in a pan, add the shallots and fry gently for about 4 minutes, or until soft and translucent. Add the mushrooms slices and the orange zest and stir to combine. Pour over the orange juice, bring to a simmer, cover and cook for 5 minutes.

Sit the cod fillets on a baking tray then pour over the orange sauce. Transfer to an oven pre-heated to 200°C and bake for about 8 minutes, or until the fish is just cooked through.

Serve garnished with the orange slices and sprinkled with chopped parsley.
