Avena de Gari (Gari Porridge)

Avena de Gari (Gari Porridge) is a traditional Equatorial Guinean recipe for a classic accompaniment of gari, fermented and dried cassava shavings cooked in water to a thick paste. Gari is found throughout sub-Saharan Africa. It's made from cassava that's soaked to remove the toxic alkaloids, fermented, grated into shavings before being dried. The dried cassava shavings are then often toasted to improve their keeping qualities (this is gari).

Ingredients:

500g gari (dried fermented cassava shavings)
500ml water
salt, to taste

Method:

Place the water in a large pot. Season to taste with water then bring just to a boil. Whilst stirring constantly add the gari in a slow, steady, stream.

Stir until the mixture is smooth then bring to a simmer and continue cooking, stirring constantly for about 15 minutes, or until the gari is cooked and the porridge is smooth and has thickened sufficiently to begin coming away from the sides of the pot.

Serve hot as an accompaniment.
