Asian-style Lettuce Wraps

This is a simple, tasty and quick Asian-inspired starter. It’s also very simple to make this recipe vegetarian by substituting the oyster sauce for vegetarian oyster sauce (made with mushrooms).

Ingredients:

100g (3 ½ oz) dried cellophane noodles
3 tbsp crunchy peanut butter
2 tbsp rice wine vinegar
1 tbsp oyster sauce
Peanut oil (optional)
Soy sauce, to taste
4 red radishes, grated
2 carrots, peeled and coarsely grated
1 courgette (zucchini), coarsely grated
115g (4 oz) tinned sweetcorn kernels, drained
12 large lettuce leaves (iceberg is good), rinsed and drained

For the Dipping Sauce:
10 tbsp rice wine vinegar
4 tbsp clear runny honey
2 tbsp toasted sesame oil
1 tsp chilli sauce
3cm (1 in) piece of fresh ginger, peeled and very finely chopped

Method:

Put the noodles in a bowl, pour over enough lukewarm water to cover then set aside to soak for 20 minutes, until soft. Drain the noodles, rinse under cold running water then cut into 8cm (3 in) lengths.

In a large bowl, beat together the peanut butter, vinegar and oyster sauce adding a little groundnut oil, as needed, to lighten the mixture. Toss with the noodles to coat then add soy sauce to taste. Cover and chill in the refrigerator for 15 minutes, until ready to serve.

Meanwhile, beat together the dipping sauce ingredients in a small bowl.

When ready to serve, stir the radishes, carrots, courgette and sweetcorn into the noodles. Transfer this to a serving bowl.

To assemble the lettuce wraps, place some of the noodle mixture in the centre of a lettuce leaf (if wanted, drizzle over some of the sauce). Roll up the leaf to enclose the filling then dip in the sauce and eat.
