Arroz con Pollo (Chicken with Saffron Rice): A Spanish recipe for a one-pot dish of chicken, tomatoes and pimentos in a saffron base finished with long-grain rice and peas.

Ingredients


3 tbsp vegetable oil
6 slices streaky bacon, chopped
2.5kg oven-ready chicken, jointed into serving-sized pieces
40g seasoned flour
2 onion, chopped
1 garlic clove, crushed
425g tinned, peeled, tomatoes
75g tinned pimentos, drained
2 tsp paprika
1/4 tsp ground saffron
1 tsp salt
600ml water
225g long-grain rice, soaked in cold water for 30 minutes and drained
175g frozen peas, thawed

Method:

Heat the oil in a flame-proof casserole. add the bacon and fry until it has rendered its fat and is crisp. Remove the bacon with a slotted spoon and drain on kitchen towels.

Cut the chicken pieces in the seasoned flour, shaking off any excess. Add the pieces to the casserole and fry until evenly browned. Using tongs, transfer the pieces to a serving plate.

Drain off the excess oil from the casserole then add the onions and garlic. Fry until soft (about 4 minutes). Arrange the chicken pieces on top of the onions, then add the tomatoes (along with their juice), the pimentos, paprika, saffron, salt and water.

Bring the mixture to a boil, then stir in the rice. Cover the casserole and transfer to the oven. Cook for 35 minutes then stir in the peas and bacon and cook for about 16 minutes more, or until the chicken is cooked through an tender.

Serve immediately, direct from the casserole dish.
