Arrowhead tubers are edible and surprisingly tasty. You could forage for them in the wild, but they are a staple of Chines new year and during that time of year, your local Chinese grocery will probably supply the tubers from the cultivar
Saggitaria sagittifolia leucopetala.
Ingredients:
250g arrowhead tubers
2 tbsp olive oil (or your favourite oil or butter)
6 tbsp milk (or coconut milk)
greens from 1 small bunch spring onions, sliced into rounds
salt and freshly-ground black pepper, to taste
Method:
Bring a pan of lightly-salted water to a boil. Peel the arrowhead tubers and slice in half lengthways. Add to the pan of boiling water and cook for about 10 minutes, or until just tender.
Drain the tubers and coarsely mash. Add the oil and cream (or coconut milk) and season to taste then mash until smooth. Turn into a warmed serving dish, garnish with the slice spring onions and serve.
