Ingredients:
1 red onion, chopped
½ red bell pepper, diced
½ green bell pepper, diced
2 spring onions, chopped
2 tomatoes, blanched, peeled. de-seeded and cut into small cubes
250ml extra-virgin olive oil
125ml vinegar
2 tbsp black pepper, freshly ground
½ tsp ground cumin
Salt, to taste
Method:
In a bowl, dissolve the salt in the vinegar. Add the onion and soak for ten minutes.
Add all the remaining ingredients, mixing to combine. Season with salt and black pepper.
Store in a glass jar or container and allow to pickle for at least two hours before eating.
