Apricot Pinwheels: A British recipe for a classic sweet (candy) made from sugarpaste containing almonds and rice that's topped with apricot jam, rolled like a Swiss (jelly) roll, coated in chopped hazelnuts and sliced into rounds before serving.
In a bowl, combine the sugars, almonds and ground rice. Add in the egg, lemon juice and almond essence. Blend these ingredients together to a stiff paste.
Divide this paste in two equal halves. Sprinkle icing sugar on a work surface. Roll out the two pieces of sugar-paste into rectangles about 20 x 12.5cm (8 x 5 in).
Brush the tops with the apricot jam then roll up like a Swiss (jelly) roll along the longest side. Coat with the nuts and chopped apricots then wrap in clingfilm (plastic wrap) and chill in the refrigerator to chill for 30 minutes.
