Apple and Potato Cake is a traditional Irish recipe for a classic cake containing an apple filling made from a potato-based dough that was traditionally cooked on a griddle and served for Halloween with a token inserted within. This is a traditional Irish Halloween cake. They were originally baked on a griddle and a lucky ring was hidden in the apple filling.
Ingredients:
450g potatoes (weigh after peeling)
30g butter, melted
45g plain flour
15g fine oatmeal
pinch of salt
2 tsp sugar
250g cooking apples, peeled, cored and thinly sliced (weigh after preparing)
a little milk
30g butter, cut into flakes
30g sugar (white or brown)
pinch of ground ginger
pinch of ground cinnamon
Method:
Bring a pan of water to a boil, add the potatoes and cook for about 20 minutes, or until tender. Drain thoroughly then turn into a bowl and mash with the melted butter until smooth. Set aside to cool slightly.
Once the mashed potatoes have cooled a little add the flour, salt and sugar and knead the ingredients together to form a pliable dough.
Divide the resultant dough in half and roll each half out on a lightly-floured work surface to form two rounds, each about 12mm thick.
Arrange the apple slices over the top of one of the rounds and top with the other, sealing the edges. Transfer to a greased baking tray, brush the top with a little milk to glaze then transfer to an oven pre-heated to 200°C (Gas Mark 6) and bake for about 25 minutes, or until golden brown and cooked through.
Remove from the oven and carefully take off the top. Sprinkle the apple with the butter flakes, sugar, ginger and ground cinnamon then replace the top and return to the oven for about 3 minutes more.
