This is a modern Danish recipe for a muffin of apples flavoured with ground ivy (you could also substitute sweet woodruff or meadowsweet).
Ingredients:
200g sugar
3 eggs
200g wheat flour
2 tablespoons baking powder
100ml yoghurt
500ml flavor-neutral oil (grapeseed is good)
100g powdered sugar
2 apples (use foraged wilding apples if you can)
A small handful of ground-ivy (or use, sweet woodruff, ground ivy, or meadowsweet)
Method:
Crack the eggs into a bowl then whisk with the sugar until white and foamy.
Add the flour, yoghurt, oil and baking powder to the bowl, carefully folding to combie with a rubber spatula (don't over-work the mixutre, you want the flour to be just combined).
Finely dice the apple then finely chop the ground ivy. Gently mix these into the batter.
Spoon the resultant batter evenly between 12 grease and lined muffin wells. Transfer to an oven pre-heated to 200°C (400°F) and bake for 20-25 minutes, or until a toothpick inserted into the centre of a muffin emerges cleanly.
Remove from the oven, allow to cool then sprinkle over the powdered sugar. Serve warm.
