Apple Dicky

The most appropriate apples to use for this simple dish would be Cornish gillyflower apples, but they're not common outside Cornish orchards so I would use any fairly tart eating apple.

Ingredients:

500g plain flour
120g lard
3 Cox's or other tart eating apples
generous pinch of salt
cold water, to bind
caster sugar for dusting

Method:

Sift together the flour and salt into a bowl. Dice the lard, add to the bowl then rub into the flour mix with your fingertips until the mixture resembles coarse crumbs. Peel and chop the apples then add to the flour mix.

Add just enough of the water to make a dry, elastic dough. Turn onto a floured work surface and knead for a few minutes, until smooth and elastic.

Roll out to about 1cm thick, transfer to a baking tray, dust with caster sugar then place in an oven pre-heated to 180°C and bake for about 20 minutes, or until cooked through and golden brown. Allow to cool, slice and serve.
