These are mini cheesecakes with an apple filling and a macaroon-like almond topping

Ingredients:

225g sweet shortcrust pastry (made with butter)
120g caster sugar
90g ground almonds
15g ground rice
white of 1 large egg (unbeaten)
a few drops of vanilla extract
120g apple pulp (cook an apple down until soft, then pass through a fine-meshed sieve)
1 tsp melted butter
75g sponge cake crumbs (Madeira Cake is good)
icing sugar, sifted, for dusting

Method:

Turn the pastry out onto a lightly-floured work surface and roll out until large enough to line the bases of 12 greased and floured tartlet tins.

In a bowl, mix together the sugar, ground almonds and ground rice. Add the egg white and the vanilla extract then set aside. Stir to combine, until the ingredients are just moistened with the eggs.

Mix together the apple pulp and the melted butter then stir in the cake crumbs. Divide this mixture between the tartlet tins, then top with the almond mixture.

Transfer to an oven pre-heated to 180°C and bake for about 20 minutes, or until golden brown.

Remove the cakes from their tartlet tins and serve warm, dusted thickly with sifted icing sugar.
