Apple Cake

This is a classic Irish winter cake, that originally used stored potatoes and stored apples as its base. Rich and moist, this cake is a delight no matter what time of year you prepare it.

Ingredients:

85g butter, diced
225g self-raising flour
pinch of salt
1/4 tsp ground cinnamon
115g light brown sugar
115g cooked potatoes, puréed by passing through a fine-meshed sieve
2 large cooking apples, peeled, cored and thinly sliced
2 eggs, beaten
milk (if needed)

Method:

Sift together the flour, salt and cinnamon into a bowl. Add the butter and rub into the flour until the mixture resembles fine crumbs. Stir in the sugar and potatoes then add the sliced apples.

Finally stir in the eggs then add milk, if needed, to give the batter a fairly soft consistency. Turn this batter into a well-buttered 23 x 12cm loaf tin. Transfer to an oven pre-heated to 180°C and bake for between 75 and 90 minutes, or until the cake is set in the centre (a skewer inserted into the centre should emerge cleanly).

This is best eaten whilst still warm, and the slices should be liberally spread with butter.
