Äppelmuffins med KESO (Apple and Cottage Cheese Muffins) a Classic Swedish recipe for a breakfast muffin made from a blend of flour, hazelnuts, apples, sugar, milk and cottage cheese bound with eggs.
Ingredients:
1 apple, peeled, cored and diced
50g hazelnuts, finely chopped
200g plain flour
1 tsp baking powder
40g granulated sugar
1 tsp ground cardamom
2 eggs
150ml milk
125g cottage cheese
Method:
In a bowl, mix together the flour, baking powder, sugar and cardamom.
Add the eggs, milk, butter, cottage cheese, apple and nuts. Stir the ingredients until just combined (do not over-work).
Line the wells of a 6-well muffin tin with paper cases and divide the batter between them.
Transfer to an oven pre-heated to 200°C and bake for about 20 minutes, or until nicely risen and springy to the touch.
Allow to cool in the tin for 10 minutes then turn out and serve warm, accompanied by coffee.
