Apelsin och rosmarinlax (Orange and Rosemary Salmon) a Classic Swedish recipe for a dish of salmon fillets baked with a creme fraiche, rosemary and orange juice topping.

Ingredients:

4 skinless and boneless salmon fillets (about 125g each)
1 tsp salt
pinch of freshly-ground black pepper
1 tsp fresh rosemary, finely chopped
250ml crème fraîche
2 tbsp concentrated orange juice

Method:

Arrange the fish fillets in a single layer in an oven-proof dish. Season with salt, black pepper and rosemary.

In a bowl, whisk together the crème fraîche and orange juice. Pour this mixture over the salmon then transfer to the centre of an oven pre-heated to 225°C and bake for about 15 minutes, or until the fish is cooked through.

Serve hot, accompanied by fried vegetables and steamed rice.
