Ansjovistorsk (Cod with Anchovies) a Classic Swedish recipe for a dish of cod fillets baked with chopped anchovies in an anchovy oil and sour cream base with a tomato and breadcrumb topping.
Ingredients:
600g cod fillets
50g anchovy fillets in oil
3/4 tsp salt
600ml sour cream
1 tbsp fresh breadcrumbs
2 tomatoes
1 bunch of fresh dill
Method:
Drain the anchovies (but reserve the oil). Finely chop the anchovies then spread over the cod fillets.
Arrange the fish in a greased baking dish then pour over the reserved anchovy oil and the sour cream. Sprinkle the breadcrumbs over the top then transfer to an oven pre-heated to 225°C and bake for about 20 minutes, or until the fish is cooked through.
Finely chop the tomatoes and dill. Sprinkle these over the fish and cook for 4 minutes more.
Serve hot accompanied by boiled potatoes.
