Amish Biscuits is a traditional American (Pennsylvania Dutch) recipe for a classic biscuit (cookie) bound with eggs, flavoured with vanilla and which uses bicarbonate of soda as a raising agent. The full recipe is presented here and I hope you enjoy this classic American version of: Amish Biscuits.

Ingredients:
240g butter
240ml vegetable oil
180g granulated sugar
180g icing sugar
2 eggs, beaten well
800g flour
1 tsp bicarbonate of soda
1 tsp cream of tartar
1 tsp vanilla extract
Method:
Mix all the ingredients together and add 1 tsp vanilla extract. Mix this in thoroughly then grease a baking tray. Drop spoonfuls of the mixture onto the tray, leaving at least 2cm between them then bake in an oven pre-heated to 180°C (350°F/Gas Mark 4) for 10 minutes.
