Supoesi (Papaya and Tapioca Soup)

Supoesi translates to Papaya Soup. It is both nutritional and delicious to eat at any time of the day. It is a traditional Samoan food that can be served for breakfast with bread, as a soup or even as a dessert

Ingredients:

2 very ripe papayas (chose very ripe ones about 16cm long)
100g of small tapioca pearls
400ml tin of coconut milk
1l of water
100g brown sugar (optional)
4 lemon leaves

Method:

Place the tapioca pearls in a bowl, cover with water and set aside to soak for about 3 hours, or until slightly softened.

Slice the papayas in half then scoop out and discard the seeds. Rinse the papaya halves then use a spoon to scrape out the flesh into a medium-sized saucepan.

Pour in 1l water then cover with a lid. Place over medium-high heat, bring to a boil and cook for about 15 minutes. Stir frequently during this time, to ensure the papaya and tapioca do not catch on the base of the pan.

After they have boiled for about 15 minutes use a potato masher to mash the papaya flesh until smooth.

Drain the tapioca pearls and add to the pan. Bring back to a boil and cook, stirring for about an additional 15 minutes, until the mixture is thick.

Taste the mixture and add up to 100g of sugar (depending on the sweetness of the papaya). Now pour in the coconut milk, mixing to combine.

Bring back to a boil and cook, stirring, for 2 minutes. Now take off the heat, add in the lemon leaves, replace the lid and set aside to rest for 5 minutes.

Take out and discard the lemon leaves then serve ladled into bowls.
