Amashaza mu gitoke (Peas with Plantains)

Ingredients:

200g dried peas
10 plantains, peeled and chopped
2 onions, chopped
2 tomatoes, chopped
4 dried piri-piri chillies, flaked
3 tbsp palm oil

Method:

Soak the dried peas in plenty of water for several hours. Drain and place in a pan. Add water to come to 5cm above the peas, bring to a boil and cook for half an hour before adding the plantains. Simmer for about 25 minutes, until the plantains are done.

Meanwhile add the palm oil to a frying pan and fry the onions, tomatoes and chillies for abut 5 minutes before adding to the tomato and pea mixture. Cook until the sauce thickens then serve as an accompaniment.
