Almejas à la Naranja (Clams with Orange Sauce): A Spanish recipe for a dish of clams in a garlic, orange juice and parsley sauce thickened with cracker crumbs.

Ingredients


1kg clams, scrubbed clean
3 garlic cloves
2 tbsp crackers, chopped
2 sprigs of parsley
freshly-ground black pepper, to taste
juice of 3 oranges
olive oil

Method:

Heat the olive oil in a cazuela (clay pot), add the garlic and fry until browned. Add the cracker crumbs along with the chopped parsley, white pepper and orange juice.

Pick over the clams and discard any that are not closed, or which do not close when rapped on a work surface. Stir the clams into the sauce and cook for a bout 4 minutes, or until the clams are open.

Serve hot, directly from the cooking pot.
