This is a classic Italian white sauce typically used as a sauce for pasta, though it can also be used as a pizza topping. It's simplicity itself to make.

Ingredients:

60g butter
120ml double cream
6 tbsp freshly-grated Parmesan cheese
1 tbsp flour
salt and freshly-ground black pepper, to taste

Method:

Melt the butter in a pan and mix in the flour to form a basic roux. Add all the other ingredients and cook, stirring all the while until the cheese melts and the sauce thickens and becomes glossy (but do not allow to boil). Take off the heat and stir-in your favourite pasta or use as the topping for a pizza.

This goes particularly well with seafood and bacon or ham.
