Alaskan Goose Barnacles

This recipe is for the native Pacific goose barnacle (Pollicipes elegans) found on the coastlines of Alaska.

Ingredients:

500g fresh gooseneck barnacles
2 garlic cloves, minced
2 tbsp olive oil
1 lemon, sliced
Salt and freshly-ground black pepper, to taste

Method:

Begin by cleaning the barnacles. Gently scrub any debris or dirt off the barnacles under cold running water then remove any visible impurities using a soft brush.

Place a large pan of lightly-salted water to a boil over medium heat. Carefully add the gooseneck barnacles and cook for 10 minutes.

Whilst the barnacles are boiling, heat olive oil in a frying pan over medium heat. Add the minced garlic and fry until fragrant (about 90 seconds).

Remove the barnacles from boiling water and drain. Add them to the frying pan with garlic and olive oil. Cook for a few minutes, ensuring they’re evenly coated.

Season with salt and freshly-ground black pepper, to taste then squeeze fresh lemon juice over the barnacles and garnish with lemon slices. Serve immediately.
