Akwadu (Baked Bananas with Lemon Juice and Coconut)

Ingredients:

4 Bananas or Plantains
100g fresh coconut, grated
60g Soft brown or golden caster sugar
4 tbsp Butter or vegetable oil
1/4 tsp Salt
2 tbsp Honey
juice of 2 Lemons
60ml Banana or orange juice

Method:

Pre-heat your oven to 180°C.

Once the oven is hot, add the bananas or plantains and bake for 5 minutes (this will make them easier to peel.

Peel the fruit then cut into slices. Arrange these neatly in a baking dish. Dot over the butter then drizzle over the lemon juice.

Sprinkle over the grated coconut, followed by the sugar.

Transfer to the centre of your pre-heated oven and bake for 15 minutes. At this point, drizzle over the fruit juice and bake for about 15 minutes, or until the top of the dish is lightly browned.

Serve hot.
