Ajo Blanco (White Garlic Sauce): A Spanish recipe for a sauce or chilled soup of garlic in an almond milk base thickened with a blend of olive oil and breadcrumbs.

Ingredients:

250g breadcrumbs, moistened with water and with the excess liquid wrung out
100g raw, blanched, almonds
2 garlic cloves, peeled
500ml cold water
250ml olive oil
2 tbsp vinegar
salt, to taste

Method:

Place the almonds and garlic in a blender with a little salt. Grind finely then add the breadcrumbs and water and process to a paste.

With the motor running on low speed add the oil in a slow, steady stream (just as if you were making mayonnaise). If the mixture thickens too quickly add a little vinegar. When all the ingredients have been incorporated and you have a thick sauce, transfer to the refrigerator to chill.

Serve well chilled. This makes an excellent chilled soup.
