A marinara sauce is a tomato sauce flavoured with onion, herbs and garlic. Typically, it has a splash of wine (red or white) and may contain capers, olives and spices. Usually, it’s slow simmered for 45 minutes, or more which is what gives it that depth of flavour. Now, however, you can prepare a tomato/marinara sauce in the air fryer in half the time. It may not quite have the depth of flavour but you can get closer by roasting the tomatoes and onions for a few minutes before preparing the sauce. I add a little sugar or honey here as it cuts through the acidity of the tomatoes, balancing the sauce.

Ingredients:

5 ripe plum tomatoes
1 small onion
2 garlic cloves
2 tbsp tomato puree
1½ tbsp olive oil
60ml (¼ cup) red wine (or use vegetable stock or water)
1 tsp basil
½ tbsp dried oregano
½ tsp sweet paprika
1 tsp brown sugar or honey (optional)
4 capers, finely chopped
6 black olives, pitted and finely chopped
Pinch of salt and freshly-ground black pepper

Method:

Preheat the Air Fryer to 200°C (400℉); halve the tomatoes and onion and sit inside the basket, cut side uppermost. Cook for 3-5 minutes, until they begin to caramelize then remove and set aside.
Put a cake tin (or small Dutch oven with a handle) in the air fryer and allow to heat for 3 minutes.
Meanwhile, finely dice the onion and garlic. Chop the tomatoes into 8 equal parts and remove the white core.

Combine all the ingredients in a bowl and add the olive oil, followed by the oregano, basil, and sweet paprika into the bowl. Stir all the ingredients to combine.

Add all the ingredients into the air fryer container and stir. Now add the water and tomato puree. Stir the ingredients and close the Air Fryer lid. Cook for 18 minutes, stirring the ingredients half way through that time.

If you prefer a rustic-style sauce use a fork to combine the ingredients. For a smooth sauce use a stick blender to blend the ingredients until smooth.

Season the tomato sauce to taste with salt and freshly-ground black pepper. If you like your sauce sweeter, add a teaspoon of brown sugar or honey and stir it through the sauce.
