Pork belly slices are one of those things that cook really well in an air fryer, becoming deliciously crisp on the outside, whislt remaining succulant on the inside. Here they're cooked with a sticky, sweet and spicy marinade.
Ingredients:
3 tbsp light soy sauce
1½ tbsp cider or wine vinegar
1 tbsp vegetable oil
2 garlic cloves, crushed or finely grated
½ tsp dried chilli flakes
2 tsp Chinese five-spice powder
2 tsp runny honey or brown sugar
½ tsp salt
500g pork belly slices
Method:
In a bowl, whisk together the soy sauce, vinegar, oil, garlic, chilli flakes, Chinese five-spice, sugar and salt together then pour into the base of a large shallow dish. Add the pork slices, turn to coat in the spice mixture then set aside to marinate at room temperature for 10–15 minutes.
In the meantime, pre-heat tour air fryer to 180°C. Arrange the pork slices in the air fryer basket, ideally in a single layer then place in your air fryer and cook for 25–30 minutes, turning halfway through and brushing with any remaining marinade, until the pork is well browned and completely cooked through.
Serve the pork with rice and steamed greens.
