Air Fryer Onion Rings

After trying them, I now think that the air fryer is the best way of cooking onion rings… without the fat they’re also much healthier. This version stuffs the rings with mozzarella cheese (though you can use the same recipe for plain onion rings, too.

Ingredients:

2 large onions, peeled, ends removed and sliced into 1cm (1/2 in) thick rounds
2 eggs
80g (1/3 cup) plain (all-purpose) flour
120g (1 cup) dry breadcrumbs
3-4 tablespoons oil (any)
2-3 balls of mozzarella cheese, sliced (about 1cm [1/2 in] thick)
Salt and freshly-ground black Pepper to taste

Method:

Separate out each individual onion ring. Measure the cheese slices against the onion and fit the slice into the centre of the appropriate ring. Continue the process until all the cheese has been used up.

Combine the flour, ½ tsp salt and black pepper in a flat-bottomed bowl. Set aside.

In a second, similar bowl beat the eggs.

Add the breadcrumbs to another bowl.

Taking each cheese-filled onion ring in turn, roll it in the flour, tapping off the excess, then dip in the egg, followed by the breadcrumbs. Repeat this process twice, so that you have a thick coating of breadcrumbs.

In the meantime, pre-heat your air fryer to 180°C (355F) for 2-3 minutes.

Spray or brush a thin layer of oil on the air fryer basket then arrange the onion rings in a single layer inside. Cook for 15 minutes, turning them over half way through the cooking process. Remove the crispy air fryer onion rings and serve them with your favourite dipping sauce.
