I love omelettes for breakfast or a quick lunch, and my wife is always happy with omelettes too. Typically, it’s fairly light, a little pecorino in the batter, onions, red bell pepper, and mushrooms if I have them, then sliced spring onions, fried bacon and slices of Cheddar on top. Normally I cook in a frying pan and place under the grill (broiler) to finish. In this case, the air fryer makes it easier as all the cooking can be done at once. For the cooking I typically use a non-stick pizza pan.

Ingredients:

3 eggs
4 tbsp onion, chopped
4 tbsp mushrooms, chopped
1 garlic clove minced
½ green chilli, minced (optional)
4 tbsp red bell pepper, diced
4 tbsp pecorino cheese, grated
spring onions, sliced
2 rashers bacon (cooked)
4 slices Cheddar cheese
salt and freshly-ground black pepper, to taste
pinch of cayenne pepper or paprika

Method:

Place your chopped vegetables in a bowl or jug (it’s easier to handle them this way).

Beat together the tree eggs and the grated cheese then add the chopped vegetables. Season to taste with salt and black pepper then stir to mix with the eggs.

Take a 15cm (6 in) non-stick air-fryer pan and put in your air fryer basket (you can use a silicone mould or if you only have a non-stick dish line with cooking parchment). Pour in the egg mixture then cook in the air fryer at 200C (400F) for 3 minutes. At this point, arrange the bacon and cheese slices on top. Add a pinch of paprika and continue cooking for 2-3 minutes, until the eggs are golden brown and fluffy inside.

Carefully turn the omelette onto a plate and serve with toasted bread, sausages, roasted potatoes and baked vegetables. Garnish with the spring onions. I usually serve this with hot sauce.
