I came across plantain chips in for the first time in Senegal. Dusted with chilli powder and coarse salt they were delicious and very moreish. Now that I have green bananas in the garden, I’ve had the opportunity to make them for myself. Originally, I deep fried them, but now I have an air fryer I can make equally crunchy chips but with much less fat. These can be made either with green (unripe) bananas or with plantains.
Ingredients:
2 Raw (green) bananas or plantains
2 tbsp Vegetable oil/coconut oil
1 ½ tsp Salt
2 tsp ground Turmeric (divided)
½ tsp Chilli flakes (optional)
250ml (1 cup) of water for soaking
Method:
Wash and peel the green bananas (or plantains). Now carefully slice the bananas with the help of a slicer for uniform shape and size.
Take 250ml (1 cup) of cool water and stir in the salt and 1 ½ tsp turmeric; keep stirring until the salt dissolves completely.
Place the bananas slices in the salt and turmeric water and soak for 10 minutes. After this time, remove the banana slices then pat dry with a clean tea towel or paper towels.
Add the oil to a mixing bowl and mix in the remaining ½ tsp turmeric. Add the banana slices and stir to coat.
Pre-heat your air fryer at 175°C (350°F) for 5 minutes. Arrange the oil coated bananas in the air fryer basket in a single layer. Cook the air fryer banana chips in your pre-heated air-fryer for 15-20 minutes. Toss the banana chips halfway through the cooking process to ensure they cook evenly.
Remove the air-fried banana chips, and season with some salt and chilli flakes according to your liking. Serve immediately.
