Who doesn't like fajitas? Delicious, slightly spicy and easy to whip up. These are made even quicker by cooking in an air fryer. I serve mine in tortillas topped with a smear of refried beans, because my wife likes them.
Ingredients:
3 skinless chicken breasts, sliced into strips
1 red bell pepper, cored and sliced into strips
1 yellow bell pepper, cored and sliced into strips
1 red chilli, sliced (remove the seeds and membranes for a milder effect)
1 tbsp vegetable oil
1 tsp garlic granules
1 tsp ground cumin
1 tbsp paprika
1 tsp
Cajun seasoning
1 tsp ground coriander
salt
To serve:
4 tortilla wraps, warmed
200g/7oz guacamole
8 tsp soured cream
200g
refried beans> blended with 50g grated cheese and warmed in the microwave
Method:
Mix together the chilli, oil, spices and salt in a bowl. Add the chicken and bell peppers and toss to coat.
Air fry at 200°C for 15 minutes, shaking the air fryer basket twice during this time.
Spread a little of the refried beans over the tortillas then top with the chicken and bell peppers. Top with guacamole and sour cream then roll up.
Cut the fajitas in half and serve immediately.
