Again, according to custom couscous is not something you should prepare in the air fryer. This is mostly due to the vortex of hot air the air fryer creates, which would splatter couscous all over the inside of the air fryer. However, just as in cooking rice or spinach all you need to do is to cook the couscous in a container and to put a lid on that container (a sheet of foil would do). You can use a cake tin, a silicone baking sleeve or even just a Pyrex bowl. I’m providing two recipes here, for a plain lightly Moroccan spiced couscous and a spicy vegetable flavoured couscous. The first makes an excellent accompaniment to a stew or curry, whilst the second goes well with grilled (or air fried!) meat.
Ingredients:
For the Moroccan Flavoured Couscous:
180g (1 cup) couscous
½ tsp
zaatar
½ tsp
ras el hanout
salt, to taste
freshly-ground black pepper, to taste
250ml (1 cup) boiling water
2 tbsp oil
For the Spicy Vegetable Couscous:
180g (1 cup) couscous
120ml (½ cup) tomato-based vegetable soup
½ tsp
harissa
½ tsp
ras el hanout
½ cayenne chilli, finely chopped
salt and freshly-ground black pepper, to taste
2 tbsp oil
120ml (½ cup) boiling water
Method:
For both types of couscous, pre-heat your air fryer to 200C (400F) for 6 minutes.
Mix together the couscous, zaatar, ras el hanout, salt and black pepper in your air fryer safe bowl or vessel. Pour over the boiling water and oil, stir well to combine then secure on your lid or cover securely with foil then place in your air-fryer and cook for 10 minutes. After this time carefully remove from the air fryer, take off the foil or lid, fluff up the couscous with the tines of a fork and serve.
Place the couscous in your bowl or vessel and stir in the ras el hanout, chilli and harissa. Pour over the soup and stir to combine then set aside to allow the couscous to absorb the soup for 10 minutes. Pour over the oil and add the water then stir to combine (you want the water to moisten all the couscous grains, so you may need to add a little more).
Cover the dish securely with foil then place in your air-fryer and cook for 15-20 minutes, or until piping hot and cooked through. After this time carefully remove from the air fryer, take off the foil or lid, fluff up the couscous with the tines of a fork and serve.
