Chicken livers make an excellent starter and if paired with a sauce and rice/couscous can provide a substantial meal. However, air frying requires a dry rather than wet coating. Though this does induce a pleasant crispiness to the outside.

Ingredients:

280g (10 oz) Chicken Livers
120g (½ cup) plain (All-purpose) flour
2 tbsp cornflour (Cornstarch)
4 garlic cloves
1 tsp mixed herbs
½ tsp smoked paprika
½ tsp cayenne pepper
1 tbsp salt, divided
Freshly-ground black Pepper to taste
Oil Spray

Method:

Rinse the chicken livers and pat dry with a paper towel.

Take garlic cloves and ½ tablespoon salt then mash with the side of a knife until it turns into a paste.

Season the chicken livers with the garlic paste and mixed herbs. Mix them well and set aside to marinate for an hour or half in the refrigerator.

Preheat your air fryer to 200C (400F) for 2-3 minutes.

In a bowl, mix together the flour and cornflour then season to taste with salt and black pepper. Beat lightly with a fork to mix. Add the marinated chicken livers and toss until well and evenly coated.

Remove the livers, tapping out the excess flour. Spray a little oil onto the base of your air fryer basket then spray a little oil onto the livers. Transfer to your air-fryer basket then place in your pre-heated air fryer and cook for 12 minutes, or until golden brown.

Carefully turn the livers over with tongs half way through the cooking process.

Serve hot, accompanied by your favourite dipping sauce.
