The chicken kiyiv (and, yes, I am using the Ukrainian rather than the Russian orthography) is a truly wonderful dish. It takes about 10 minutes to make and maybe 20 minutes to cook.

Ingredients:

2 Chicken Breast
100g (3 ½ oz) Soft Cheese (garlic and herb flavour) [cream cheese or a roule]
¼ tsp Garlic Puree
1 tsp Parsley
1 Medium Egg (beaten)
100g (3 ½ oz) Breadcrumbs
Salt and freshly-ground black Pepper, to taste

Method:

In a bowl, mix together half the parsley, the garlic and the soft cheese.

Place each chicken breasts between two sheets of clingfilm (plastic wrap) then use a rolling pin (or meat mallet) to flatten the chicken breasts and then cut in half. This then allows you to have a top and a bottom part of the chicken breast and makes it easier to stuff.

Place the cheese mixture in the middle and push the two chicken breasts halves together.

In a mixing bowl combine the breadcrumbs, salt, pepper and the remainder of the parsley. Cover the chicken in the beaten egg and roll in the breadcrumbs.

Place the two chicken kyivs in the basket of an air-fryer and cook at 180°C (360°F) for 25 minutes, or until the chicken is cooked and the breadcrumbs are crispy.
