Broccoli lends itself well to air frying and in combination with potatoes and carrots you can use it to make a whole meal with a roast in the air fryer (the only thing you can’t make is gravy, though the fat from the air frying process can be used as the base for a traditional stove-top gravy.

Ingredients:

1 small head of broccoli, separated into florets (approximately 4 cups)
1 tbsp avocado oil, or your choice of oil
½ tsp garlic salt (this provides garlic flavour without burning)
¼ tsp chilli flakes

Method:

Cut your broccoli into small florets (try and make these as even as you can, so they cook evenly) and turn them into a bowl. Drizzle with the oil or vegetable broth and sprinkle with the seasoning. Mix well to evenly coat the broccoli.

Add 60ml (1/4 cup) of water to the bottom of your air fryer, below the basket. This will stop the broccoli from smoking and prevent them from drying out and becoming bitter. Add the broccoli to your basket and air fry at 195°C (380°F) for 7-9 minutes, until desired brownness is reached (you want it slightly crispy but not overly browned). Give your broccoli a stir, or shake your basket around the halfway point.

Serve your broccoli with lemon wedges or sprinkled with Parmesan cheese, if desired.
