Ahlu Hin (Potato Curry)

Ingredients:

1kg small potatoes
2 tbsp fish sauce
8 tbsp vegetable oil
2 tsp salt (or to taste)
1 tsp ground turmeric
2 tsp curry powder
2 tsp hot chilli powder
4 onions, finely chopped
2 garlic cloves, crushed

Method:

Peel and wash the potatoes.

Heat the oil in a large pot, add the onion, garlic, chilli powder and ground turmeric and fry for about 4 minutes, or until the onions are soft and the spices are fragrant.

Add the potatoes, then stir in the fish sauce, salt and 1l water.

Bring the mixture to a boil and cook, covered, for about 20 minutes, or until the potatoes are tender.

When the potatoes are cooked, sprinkle over the curry powder. Take the curry off the heat, turn into a warmed bowl and serve.
